Two Easy Vegan Recipes To Use Your Vegan Chocolate

If you eat a vegan diet, then you probably reach for the vegan chocolate when you're out shopping. There are quite a few brands that offer high-quality vegan chocolate. However, the struggle comes when you decide you want to bake with that chocolate. In spite of how common vegan chocolate is, dessert recipes that call for vegan chocolate are a bit harder to find. Here are two easy ones that will make your taste buds happy.

Vegan Chocolate Chip Cookies

Ingredients:

  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup coconut oil
  • 1 1/2 cups all-purpose flour
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 8 ounces vegan chocolate chips or chocolate chunks

Combine the sugars and coconut oil. Mix until light and fluffy. Pour in the almond milk and the vanilla, and mix until well combined. Then, add the flour, salt, and baking soda, and continue mixing until a uniform dough forms. Stir in the chocolate chips.

Drop the cookie dough by teaspoons onto ungreased baking sheets, leaving at least 2 inches between balls. Bake at 375 degrees F for 10-12 minutes. Let cool for 5 minutes on the pan, and then remove to a wire rack to continue cooling. Enjoy!

Vegan Chocolate Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup oat flour
  • 1/3 cup white sugar
  • 1/2 cup cocoa powder (most cocoa powder is vegan)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup oat milk
  • 1/2 cup canola or vegetable oil
  • 1/2 cup almond butter
  • 1 teaspoon vanilla extract
  • 1 cup vegan chocolate chips or chunks

Combine the flour, sugar, salt, baking powder, baking soda, and cocoa in a large bowl. Mix well, and set aside.

In a separate bowl, whisk together the almond butter, oat milk, vegetable oil, and vanilla extract. 

Pour the wet ingredients into the dry ingredients, and stir gently. Fold in the chocolate chips.

Scoop the batter into 12 muffin tins that have been lined with paper cupcake liners. Let the muffins sit on the counter for 10 minutes, and then place them in a 375 degree F oven to bake.

Bake the muffins for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool before enjoying.
