Getting Creative With Extra Chimichurri Sauce

Often, it is cheaper to buy chimichurri sauce in wholesale, bulk quantities. But once you use the chimichurri you need, you may not know what to do with the rest of it. There are only so many tacos and nachos you can make. Thankfully, chimichurri is pretty versatile if you're willing to get creative. Here are some fun and interesting ways to use up the leftover amount.

Make a chimichurri spread.

Chimichurri on its own is a little watery and loose to use on a sandwich. But you can make a chimichurri spread that tastes awesome on almost any sandwich, from turkey to vegan cheese. Simply combine one part chimichurri with one part of your favorite mayonnaise. If you decide this mixture is too loose, then you can add a little more mayonnaise to thicken it up more. You can store the resulting spread in the fridge for a week or so.

Pan fry some vegetables.

Since chimichurri has an oil base, which means you can actually pan fry things in it quite well as long as you keep the heat low. Try tossing about 3 tablespoons of chimichurri in a pan, and then adding about 2 cups of chopped veggies. Broccoli, carrots, onions, or a combination of all three works well. All you really need to add is a pinch or two of salt. The chimichurri on its own adds plenty of flavor. Just stir fry until the veggies are your desired tenderness, and enjoy.

Use it on top of soups.

A really unique way to use chimichurri is to put a little of it on top of your favorite soups. It's especially nice on top of squash soup or pumpkin soup. A couple of tablespoons can add a whole new element of flavor to the soup. Some people like to mix it in, and others prefer to leave it on top as a garnish, taking a little bit with each spoonful.

Dress a salad.

If you think about it, chimichurri is basically a really fresh, herbal salad dressing. As such, you can use it as a salad dressing if you want. Just combine your favorite veggies and toppings, then drizzle some chimichurri over the top. It's really good if you top your salad with some crumbled up tortilla chips for crunch.
